Somebody just asked me in a message what’s for dinner. 😉 What a fun and easy post for this lazy Sunday afternoon!
Well, we’re having Olive Garden Copycat Zuppa Toscana.
It is SO tasty and what I love is that it is extremely versatile.
I made some chicken stock earlier this week that I’ll be using as the broth and I have fresh onions, garlic, and kale to throw in. I’m using some summer sausages I got through Angelfood Ministries as the meat, leaving out the bacon because I don’t feel like making bacon to throw in this time… and I’m using 1% milk because that’s what I have. 🙂 I’m also adding in extra potatoes because I got a ton through Bountiful Baskets this week.
Last time I made it, I used a box of broth and Italian sausages.
It’s so fun to be able to mix and match what you have vs. what is called for and still end up with something absolutely delicious!
