I hope you’re all having a wonderful and blessed day today! I’d love to hear how you have spent the day and what your traditions and such are. 🙂
We spend Easter at my grandmother’s house and have a smorgasbord of delicious traditional holiday foods – usually ham and/or turkey, casseroles galore, pies and candies, etc. This year, I am taking a fresh fruit platter and a fresh veggie platter. Some would say I’m “ruining” our meal by doing this, but I’m saying that it’s a great way for me to share in our awesome bounty of produce!
Anyway, I thought I would share some great links that give EGGcellent suggestions on how to use hard-boiled eggs. (I couldn’t resist…sorry.) The picture above is of my yummy farm-fresh eggs I’ve hard boiled… YUMMMMMMM!
- 5 Recipes: Salads, soups, pickled, casseroles… those are a few ideas you’ll see here.
- Classic ideas – practical for everyone!
- Tons of great ideas: Soups…rice…meatloaf… COOKIES???? Seriously, look at this!
- HeatherFeather has put together a compilation of over 30 recipes for hardboiled eggs. Get to crackin’! (Again…couldn’t resist…)
- Another collection of recipes.. Lots to choose from.
What will you be doing with YOUR leftover eggs? I’m thinking we’ll at least have some egg salad sandwiches and I might be brave and try the cookies. Wish me luck! 😉

Our Easter Day traditions are very simple. We don’t currently have a home church so we are worshiping at home this year.
Kids wake up to Easter Baskets (From mom & dad, not the Easter Bunny)
Then we do an Egg hunt-using our land and my parents land next door-so they have to really hunt! (we have to be sure to count eggs before and after the hunt! LOL)
Then dinner with my parents. I’m hosting this year because my mom had to work.
Throughout the day we watch Easter shows (like Veggie Tales, Jesus stories and such) and read Bible verses, story books and might do a craft or two as time/interest allows.
We didn’t dye any eggs this year-but I do have a surplus of fresh eggs form our hens! LOL

I love to eat Egg Salad Sandwiches for the weeks after Easter. For some strange reason, I don’t make it any other time of the year but I sure love eating it after Easter.

I missed out on hard boiled eggs for easter, so yesterday I made up some deviled eggs to have with our dinner. I’m the only one who ate them.

We love our hard boiled eggs straight out of the shell, but I may be up for something different. Thanks for the links!
