Easy Paleo Treat – Cake in a Mug

Whether you are paleo, primal, low carb, Whole 30, or even on The 21 Day Sugar Detox, you need an indulgence every now and then!  I saw the Paleo Mug Cakes from The Wannabe Chef and knew I had to try it for an easy paleo treat.  After making it for the first time, I immediately thought of some variations and got to work testing them!

My favorite part, besides the taste, is that you can mix up all the ingredients directly in the mug, microwave, and it’s ready to eat in less than 5 minutes!  As long as you don’t go crazy with sweeteners, you can eat this with peace of mind.  Every bite is nourishing and tasty!

I hope you enjoy this treat as much as I do. Play around with modifications to suit your own tastes.

Cake in a Mug

Here is the formula for a delicious, easy paleo treat.

1 Part Fruit

Choose one, or a combination to equal about the same measurement.

  • 1 small banana (mash it in the mug with a fork)
  • 1/2 cup pumpkin puree
  • 1/2 cup sweet potato puree

+

1 – 1 1/2 Tablespoons Nut Butter

Choose your favorite type.  Homemade works great!

  • almond butter
  • cashew butter
  • sunflower butter (okay, so technically not a nut!)

+

1 Egg

Any average ol’ egg will do!  I usually use a large one.

Extras

The possibilities here are endless!  Choose one or more to enhance your tasty goody.

  • 2 Tbsp cocoa powder
  • 1 Tbsp chocolate chips
  • 1 Tbsp chopped nuts
  • 1-2 tsp honey or other sweetener of choice (or more, to taste)
  • 1-2 Tbsp berries
  • 1-2 Tbsp dried fruit
  • 1 Tbsp shredded carrots
  • 1 tsp cinnamon
  • 1 Tbsp flax meal
  • a dash of citrus zest

~Mix all ingredients together in a large mug.

~Microwave 2 1/2 minutes.

Microwave an extra 30 seconds to a minute if it’s still wet in the middle after that.  Some combos stay more moist than others!

 

This easy paleo treat is so yummy!  The combination I love most is banana+almond butter+egg+cocoa powder+honey+chocolate chips.  Another great combo is pumpkin+almond butter+egg+walnuts+honey+cinnamon.  I think a banana blueberry combo would be heavenly as well!

Be prepared: cake in a mug is filling and satisfying!  Not only does this make a wonderful late night treat, but it is a great meal replacement as well.

  6. Hi! I found your blog when searching for a snack to use some sweet potato this week and really like it!
    I made this cake in a mug with sweet potato, almond butter, the egg, and added cinnamon and vanilla. It was so good!!! I was surprised how delicious the texture was, kinda like a sweet potato pie.
    (I didn’t add any sweetener to mine as my sweet potatoes were extremely sweet)
