I have a little secret to share with you. Paleo eating does not have to be complicated. It doesn’t have to take ridiculous amounts of meal planning, cooking, or extra effort. It really can be easy, healthy, and tasty.
I have several favorite go-to meals that are paleo, but this one has got to be one of the most filling and simple to prepare. My children eat it willingly, my husband eats huge helpings, and I feel satisfied after we’re done with the meal.
Easy Paleo Spaghetti
This recipe is so simple and versatile. It really seems to be more of a method than a real recipe.
Feel free to change it up for your family. Double ingredients if you need to for a larger crowd, or scale back if you are serving 1-2 people.
Ingredients
- 1 large spaghetti squash
- 1 pound ground beef
- 1 pound ground turkey
- 1 large jar or can of crushed tomatoes, or use fresh
- 1 large jar spaghetti sauce (check ingredients to make sure it is free of sugars and other unnecessary ingredients), or use homemade
- 1 Tbsp garlic powder
- 2 Tbsp Italian Seasoning
- 2 Tbsp dried onions (or 1/2c fresh)
- Salt & Pepper
Instructions
- Prepare your spaghetti squash. Either bake spaghetti squash or microwave spaghetti squash
- Meanwhile, brown your ground beef and ground turkey.
- Once your meat is just about finished, drain it of fat and add in the crushed tomatoes and spaghetti sauce.
- Stir in the onions and garlic powder.
- Cover and simmer for 10-20 minutes. (You can skip this entirely if you are short on time.)
- Serve the meat sauce over the spaghetti squash noodles.
- Sprinkle with Italian seasoning. Salt and pepper as needed.
This is wonderful for clean eating folks and anyone that is trying to avoid grains. This easily serves 6. If you eat dairy, it is delicious topped with some parmesan or mozzarella cheese.
This would be an easy recipe to sneak in even more veggies if you want. You could either add in some pureed vegetables with the sauce, or simple add in diced vegetables during the simmer stage or even during the meat browning step.
Keep in mind that leftovers will seem watery as the spaghetti squash does get awfully wet as it cools. When we are ready to reheat the leftovers, I simply drain most of the liquid from it before heating it up and the taste and texture stays good.
If you end up with a lot of extra sauce, you could add a little milk (almond, coconut, cow’s milk, cream – whatever you like to use!) and it makes it more of a meaty tomato soup. It could also be used as a base for a meaty vegetable soup by just adding in whatever veggies you’d like and some vegetable broth. Simmer that together and you have a tasty paleo leftovers meal!
