The best part about being paleo, in my opinion, is knowing that everything you put into your mouth is nourishing to your body. I try and remind myself of this when I’m trying to decide whether to stick to paleo foods or to splurge and eat “regular” foods. How did you do last week?
Last week, we focused on eating 4 different veggies every day! Was this harder or easier than you expected? The extra variety is SO good for you and it keeps your tastebuds happy, too.
I made sure to eat my 4 servings of different veggies every day, and loved it. I need to branch out and try some new veggies this week! I may keep up the 4 veggie challenge through the month and see how that goes.
This week’s challenge is all about being able to eat the foods you love: paleo style!
For this mini challenge, I am hoping to try some paleo Girl Scout cookie copycat recipes. I’ve seen a lot of delicious variations, and I think it’s about time I give them a go. 🙂 I also want to try paleo Chick-fil-a nugget clones as well, substituting the buttermilk or cream for some almond or coconut milk instead.
