I’ve gotten a bit lazy lately with our meals. I will say that I’ve still stuck to my goal to ACCOMPLISH more, and have been eating out a lot less. That said, I’ve been working on losing all of my baby weight and have been eating significantly less myself. This makes preparing meals a little less exciting because I’m logging all of my food and I kind of hate logging a dozen ingredients and exactly what increments I’m going to be eating for my meals. I’d rather buy something prepackaged or make something super simple and just be done with it! However, I’ve been plugging along anyway. 🙂
Crockpot Turkey Bean Soup
This was an easy one to just throw together. It is fairly low calorie for what you get, and it reminded me how CHEAP a meal can be with by using dry beans! It does take a little prep work, but I thought it was worth it.
Ingredients:
- 1 large bag of 16 bean soup mix (or really any dried beans)
- 1 cup leftover cooked turkey
- 1 large can crushed tomatoes
- salt & pepper to taste
To Make:
- Follow instructions on the beans to do the “quick soak” method on the stove or, the night before, do the regular soaking method.
- Once you have finished and drained the beans, dump all of the beans into your crockpot and cover with water about 2″ higher than the beans.
- Dump in the turkey and crushed tomatoes, reserving the seasoning packet from the bean soup mix (if yours has one).
- Cook on low for 6-8 hours.
- Add the seasoning packet and salt/pepper about 20 minutes before serving. (Otherwise, the beans will be hard!)
Italian Chicken Bake
This is so good and so versatile. I originally got the recipe from Cheese Curd in Paradise on the recommendation of several moms in a cooking facebook group I’m in. I basically had the ingredients, so I figured I’d make the recipe! I did make some changes, though, and below is the recipe I used on our family’s version:
Ingredients
- 2-3 large baking potatoes, scrubbed clean and cut into bite-sized chunks
- 1 1/2 – 2 lb boneless, skinless chicken breasts
- 3 cups green beans (I used frozen)
- 1 packet Italian seasoning/dressing mix
- 1/2 stick butter
- salt & pepper to taste
To Make:
- Preheat your oven to 350 degrees.
- Meanwhile, load your large baking dish (mine was 9×13) with the chopped potatoes on one side, chicken breasts in the middle, and green beans on the other side. *Note: You may want to grease the pan first if yours is prone to sticking.
- Sprinkle the Italian seasoning packet over all of the ingredients in the pan.
- Cut up the half stick of butter into small chunks and scatter and place on top of your ingredients so when it melts during cooking, it gets on everything.
- Salt and pepper as you wish.
- Cover with foil and bake one hour.
Easy Crockpot Pork Chops
I just threw this together, and it worked out! Next time, I might add double the water and gravy. I served this with rice.
Ingredients:
- 2 lb pork chops
- 1 packet brown gravy mix
- 1 cup water
To Make:
- Dump meat into the crockpot.
- Sprinkle gravy mix on top, followed by the water.
- Cook on high 3-4 hours or low 6-8 hours.

I’ve never made pork chops in the crock pot before but I bet they would be delicious. While I love pork, the rest of my gang aren’t big fans of it so we don’t have it very often but this would be a different way to serve it and they might actually like it. 🙂

Italian Chicken Bake is one of my favorite easy weeknight meals! You should try my broccoli, ham & cheese casserole recipe – it’s supper yummy and mostly healthy (depending on how much cheese you add!).
