Peanut Butter Cookie Ice Cream Sandwiches

Ice cream sandwiches are a fun treat, so why not make your own – with a twist?  These goodies are made with from-scratch peanut butter cookies that will wow your family and have them begging for more.  Serve right away or save for later.  These peanut butter cookie ice cream sandwiches freeze beautifully.

Peanut Butter Cookie Ice Cream Sandwiches

Peanut Butter Cookie Recipe

Cookie Ingredients: 

1 cup unsalted butter, room temp
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
2 eggs, room temperature
2 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda

Cookie Directions: 

-Preheat oven to 375 degrees. Line a cookie sheet or two with parchment paper.
-In a medium bowl, cream the butter, peanut butter, and both sugars together.
-Beat in the eggs.
-Sift your flour, baking powder, baking soda, and salt into another bowl. Then, stir this dry mixture into the butter mixture.
-Cover the dough with plastic cling wrap and refrigerate for 1 hour.
-Remove cookie dough from the refrigerator and roll dough into 1 inch balls.
-Put  balls on the lined baking sheets.
-With a fork, flatten each dough ball, making a crisscross pattern.
-Bake at 375 degrees  for about 10 minutes, or until cookies begin to brown.
-Remove cookies, placing them on a wire rack to completely cool.

Ice Cream: 

Choose your favorite ice cream for this. I prefer vanilla bean, but you could use anything. Chocolate would also be yummy.

Allow your ice cream to soften slightly before scooping it between 2 completely cooled peanut butter cookies.

Want an even more indulgent treat?
Immediately after scooping the ice cream between the cookies, you could roll each ice cream sandwich in a plate of chocolate chips, ice cream touching the chips to pick them up. After doing that, wrap each ice cream sandwich in cling wrap and place in the freezer to harden before serving.

Other ideas to roll your sandwiches in are sprinkles, mini chocolate chips, peanut butter chips. crushed candy bars, nuts, or coconut flakes.  Make them all different and watch people duke it out for their favorite!
