Peanut Butter Cookie Ice Cream Sandwiches
Peanut Butter Cookie Recipe
Cookie Ingredients:
1 cup unsalted butter, room temp
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
2 eggs, room temperature
2 1/2 cups flour
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp baking soda
Cookie Directions:
-Preheat oven to 375 degrees. Line a cookie sheet or two with parchment paper.
-In a medium bowl, cream the butter, peanut butter, and both sugars together.
-Beat in the eggs.
-Sift your flour, baking powder, baking soda, and salt into another bowl. Then, stir this dry mixture into the butter mixture.
-Cover the dough with plastic cling wrap and refrigerate for 1 hour.
-Remove cookie dough from the refrigerator and roll dough into 1 inch balls.
-Put balls on the lined baking sheets.
-With a fork, flatten each dough ball, making a crisscross pattern.
-Bake at 375 degrees for about 10 minutes, or until cookies begin to brown.
-Remove cookies, placing them on a wire rack to completely cool.
Ice Cream:
Choose your favorite ice cream for this. I prefer vanilla bean, but you could use anything. Chocolate would also be yummy.
Allow your ice cream to soften slightly before scooping it between 2 completely cooled peanut butter cookies.
