I love eating cookies, but actually throwing together the ingredients to make them can be a challenge with a baby and young preschooler in the house. Sometimes I seriously just put a little bit of this and a little bit of that, cross my fingers, and hope for the best.
This pecan chocolate chip cookies recipe is totally in that haphazard spirit of creating something tasty. That’s the twist I’m talking about. I hope you enjoy it!
Pecan Chocolate Chip Cookies
Ingredients:
1 stick salted butter
1 box yellow cake mix
2 packets of maple & brown sugar instant oatmeal (or use the equivalent of your favorite DIY mix)
2 eggs
1 bag chocolate chips (minis are fun)
1 cup chopped pecan pieces
Directions:
-Preheat oven to 350 degrees.
-Line cookie sheet with parchment paper.
-Using a saucepan on low-medium heat, add butter, stirring until it reaches a golden brown. Keep stirring even after it has melted.
-Put cake mix in a mixing bowl. Add oatmeal packets, eggs, chocolate chips, and chopped pecans. Pour the melted butter into the mixing bowl and beat on low speed (or hand mix with a spatula) only until all ingredients are combined.
-Scoop the dough using a medium sized ice cream scoop onto the prepared cookie sheet.
-Bake at 350 for 10-15 minutes or until the edges of the cookies begin to turn brown.
-Allow to cool on the lined cookie sheet for 10 minutes. Remove them to a wire rack to allow to completely cool.
