It is so important to empower kids with skills that they are going to need one day when they grow up and are in the real world.  Eating well is a big deal, and so is learning how to prepare snacks and meals.

My children love to help me out in the kitchen.  I love teaching them how to look through and select recipes, measure ingredients, and mix wholesome foods together to create something delicious. It brings a smile to my face to see my kids working hard, but still having fun.

Peanut Butter Pretzel Balls

You Will Need:

  • 1 cup crushed Goldfish® crackers, Pretzel variety
  • 1 cup old fashioned oats
  • ⅓ cup peanut butter
  • ⅓ cup honey
  • 2 Tbsp mini chocolate chips (optional)
  • 1 Tbsp flax meal (optional)

To Make:

  1. Place your Goldfish crackers in a bowl or plastic bag and crumble them into smaller pieces.  You could also crush or grind them up in a food processor if you’d like them to have a finer texture.
  2. Combine your Goldfish crackers with the remaining ingredients in a medium-sized bowl and stir until combined. Refrigerate the mixture for about an hour.
  3. Roll the mixture into quarter-sized balls onto wax paper, parchment paper, or a silicone lined baking sheet.  Makes about 2 dozen. Eat right away or store in the refrigerator for up to 5 days.

As you can see, these Peanut Butter Pretzel Balls are simple to prepare.  They combine sweet and salty with a satisfying crunch from the Goldfish crackers.

There are so many optional ingredients you could play around with, like the mini chocolate chips and flax meal that I used.  Other fun additions are chopped nuts, coconut flakes, chia seeds, or wheat germ.  My base recipe is an awesome starting point for some serious culinary experimentation!

If your family would prefer these as a granola bar rather than balls, that will work too!  Instead of forming into balls, simply pour into a shallow baking dish and squish the mixture down into it until flat.  Refrigerate for one hour (or you could flash freeze them) and then slice into bars.  Wrap individual bars in waxed paper and refrigerate.

Goldfish crackers have always been an awesome snack choice on their own.  They’re tasty for the kids and convenient for me, so we always have a package or two in our pantry.  When I was developing this recipe, I was inspired by my kids’ favorite Goldfish crackers flavor, Pretzel.  They love the salty crunch.

I picked up a 30 oz bulk carton of Goldfish Pretzel crackers and also their second favorite, Flavor Blasted® Xtra Cheddar. They are on a special display with all of the flavors, but we also found them in the cracker aisle.
