Cake Mix Cookies with a TWIST

Okay, this is a fun cake mix cookies recipe with a twist!  They use 2 “unusual” ingredients – a boxed yellow cake mix and packets of maple and brown sugar instant oatmeal.

My daughter is always looking for interesting new recipes, and she’s a lot like me.  We like to put a little bit of this and a little bit of that.  This one doesn’t even require a measuring spoon!  That’s my kind of baking.

Cake Mix Cookies with a TWIST


1 stick salted butter
1 box yellow cake mix
2 packets of Maple & Brown Sugar instant oatmeal
2 eggs
1 bag mini chocolate chips


-Preheat oven to 350 degrees.
-Line a cookie sheet with parchment paper.
-Using a saucepan on low-medium heat, add your stick of butter, stirring until it reaches a golden brown.  Whisk consistently even after the butter has melted.
-Pour melted butter into a mixing bowl.  Add the cake mix, oatmeal, and eggs.  Beat on low speed only until all ingredients are combined.
-Scoop the dough using a medium sized ice cream scoop onto the prepared cookie sheet.
-Bake at 350 for 10 minutes or until the edges of the cookies begin to turn brown.

Wasn’t that cool?  They come together pretty quickly and taste great.  These are perfect to take to a potluck, a picnic, or just to enjoy after a long day.  It has those comfort food flavors that will remind you of your childhood.  They would be perfect with a glass of milk.

The best part is probably the sheer amount of ooey gooey chocolate chips.  A whole bag?  YES, PLEASE!

If you wanted to mix it up, you could always change the flavors of the ingredients you use.  Change the type of oatmeal packet, choose a different type of cake mix, or even experiment with different types of chips – there are lots of choices for those or even use chopped up candy bits.
