Kitchen Sink Veggie Pasta Salad Recipe

Are you looking for a colorful and loaded pasta salad recipe that will impress everyone?  You’ve got to try this kitchen sink veggie pasta salad.  It is served cold and includes a few ingredients that you’ll be surprised to see, but delighted to taste as you enjoy eating it.

Kitchen Sink Veggie Pasta Salad is the perfect dish to bring to a pot luck or picnic!

While the recipe is vegetarian as written, feel free to throw in your favorite meat if you’d like it to be more of an entree pasta salad.  This would be perfect for pot lucks or just to have on hand as a pre-prepared, yummy dish for the family to enjoy any day of the week.  This would also be just right for a picnic or even for a unique option at a birthday party or baby shower.

Kitchen Sink Veggie Pasta Salad

Ingredients:

8 oz Bowtie Pasta
1 lb Broccoli
2 Large Carrots
Medium Red Onion
1 Lemon
1/2 cup Mayonnaise
1 cup Dried Cranberries
1/2 cup Chopped Walnuts
Sugar (to taste)
Garlic Powder (to taste)
Salt & Pepper (to taste)
 
To make:
1. Boil the bowtie pasta in salted water. Add oil to prevent noodles from sticking. Cook until noodles are al dente. Strain noodles, rinse with cold water and set aside.
2. In a bowl, combine your 1/2 cup of mayonnaise, sugar and fresh lemon juice to taste. This will be the dressing, so make sure you add enough lemon juice. Set aside.
3. Chop your broccoli into pieces no larger than one inch each.
4. Use a potato peeler or shredder to create thin pieces of carrot.
5. Dice the red onion into small 1/2 inch pieces.
6. Combine cooked pasta, broccoli, shredded carrots, red onion, and your homemade dressing into a large bowl and mix thoroughly.
7. Add the 1/2 cup chopped walnuts and 1 cup dried cranberries to the pasta mixture. Stir everything until it is mixed well.
8. Add garlic powder, salt and pepper to taste. Give your pasta salad another thorough stir to incorporate all of the ingredients.
9. Cover the bowl, and allow pasta salad to rest in fridge for at least one hour before serving.
